I have made this pumpkin bread in mini loaves and handed it out as gifts for several Christmas occasions. A friend gave me this recipe a long time ago, and over the years I have tweaked it some just to add a bit more pizzazz!!
As soon as September hits I start baking this bread! Everyone loves it and honesty a loaf last about a day and a half in my house. When the kids were in college, I would send them a care package with a couple of loaves (one to share and one for themselves)

Best Pumpkin Bread Recipe Ever!
Here is what you will need
Ingredients
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 cup of sugar
- 1 teaspoon baking soda
- 1 cup pumpkin puree
- 1/2 cup olive oil
- 2 eggs beaten
- 1/4 cup water
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cardamom
- 1/4 teaspoon allspice
- 1/2 teaspoon cinnamon
- Optional 1/2 cup walnuts/pecans and/or 1/2 cup chocolate chips
Preheat oven to 350 degrees. In a small bowl sift together flour, salt, sugar, baking soda, and spices. In a bigger bowl mix pumpkin, eggs, oil, and water. Then combine dry ingredients with the pumpkin mix. After mixing you can also add your optional walnuts/pecans and chocolate chips.
Then pour into a well oiled 9X5 loaf pan or mini loaf pans (makes two loaves). Bake 50 minutes until straw poke in the center of the loaf comes out clean. In fact, the mini loaf pans will not take as long. Cook for about 35 minutes.
Then turn out of pan and let cool on cooling rack.
